This recipe is based off a basic one that can be adapted for whatever fruit or additions you want to put in the batter.

Blueberry Pancake Recipe

1 ¾ cups all-purpose flour

¼ cup granular sugar

1 Tablespoon baking powder

½ teaspoon sea salt

1 ¾ cups whole milk -or- buttermilk

2 eggs

3 Tablespoons safflower oil

1 Tablespoon unsalted butter, melted

1 teaspoon vanilla extract

1 cup fresh -or- frozen blueberries

Preperation

1. Whisk together flour, sugar, baking powder and sea salt. Set aside.

2. Combine milk, eggs, oil, butter and vanilla extract.

3. Add wet ingredients into the flour mixture and whisk until smooth.

4. Heat a skillet to medium, using a little butter to grease the pan, pour 1/3 cup batter into pan. Once air bubble form on the surface of the pancake, they are ready to be flipped over. Cook for few minutes. Repeat with remaining batter. Makes approximately 10 pancakes.
